摘要 : When a total of 86 samples of raw milk (67 from local vendors, 6 from vendors at organized dairy units and 13 from a local milk plant) were analysed for standard plate count (SPC), methylene blue reduction time (MBRT) and titratab... 展开 When a total of 86 samples of raw milk (67 from local vendors, 6 from vendors at organized dairy units and 13 from a local milk plant) were analysed for standard plate count (SPC), methylene blue reduction time (MBRT) and titratable acidity (TA), 41samples that were found to be adulterated with carbonates/bicarbonates all had TA within the legal limit of 0.17%. This showed that TA was unreliable as a platform quality control test at milk collection centres. In comparative grading of the samples onthe basis of MBRT and SPC, there was agreement between the 2 methods for 30 samples only; the MBRT placed 54 samples in a higher and 2 in a lower category than did the SPC. The SPC graded 64 samples as poor (SPC >5 million/ml) compared with only 17% when the MBRT was used. Thermoduric counts determined for 26 samples ranged from 14 to 3 million/ml and were <200/ml in only 6 samples. 收起
