However, despite significant changes in the last two years in the range of poultry meat products produced in Russia, whole hen carcasses still dominate output in this sector. Russian poultry producers are diversifying their product ranges with the aim of satisfying demand for varied, easy-to-use poultry products, including delicatessen products, dietetic foods (e.g. with reduced fat), and cheap and tasty mass-market products. Some Russian poultry plants, such as Roskar, Elinar, Petelinskaya and Obsharovskaya, have chosen to concentrate on the production of chilled semi-finished products. There are now >85 Russian-produced semi-finished poultry products available. The competitiveness of these products is influenced strongly by their quality, which in turn is determined by the quality of birds available for processing, their age, weight, fatness, level of muscle tissue etc. In recent years, the quality of broiler hens produced in Russia has improved as a result of the introduction of new crosses and new housing and feeding technologies. Defects that can arise in poultry meat and affect its sale price are outlined; increased costs are associated with the additional processing required to remove such defects. Causes of these defects are considered, including organizational and technical aspects. 收起
