摘要 : Milk samples were procured from Haryana Dairy Development Co-operative Federation Ltd. at various stages (primary milk collection centre = stage-1, after two hours of initial sampling = stage-2 and at reception docks after unloadi... 展开 Milk samples were procured from Haryana Dairy Development Co-operative Federation Ltd. at various stages (primary milk collection centre = stage-1, after two hours of initial sampling = stage-2 and at reception docks after unloading at chilling centre= stage-3) during winter and summer seasons and evaluated for microbiological, physico-chemical and sensory qualities. No significant (P<0.05) effect on percent Fat, SNF, Total solid and Specific gravity were observed at all the three stages during boththe seasons. The per cent acidity content was increased significantly (P<0.05) at stage-2 and at stage-3 the Standard plate count, Coliform count and Staphylococci count (log cfu/ ml) significantly (P<0.05) increased and MBR time significantly (P<0.05)decreased at stage-2 as compared to samples collected at stage-1. A further significant (P<0.05) change in microbial quality was observed in milk samples collected at stage-3 as compared to stage-2. The microbial quality of milk samples collected at allthe three stages were significantly (P<0.05) poor in summer season as compared to winter season. Milk samples collected at all the three stages were sincerely acceptable. It is concluded that the microbial contamination of milk procured and processed byHaryana Dairy Development Co-operative Federation Ltd. needs to be controlled at all the three stages. 收起
