This study investigated the protease activity of Oenococcus oeni X2L viable cells where red wine nitrogenous macromolecular fraction (NMF) was the sole nitrogen source. Remarkably, under unfavourable conditions (the presence of sulfur dioxide and ethanol) Oenococcus oeni produces an exoprotease that doubles the rate of amino-acid liberation from NMF. Analysis by HPLC identified a peptide peak that diminishes markedly during the first 2 hours' incubation. 收起
