Milled rice kernels of both 'Basmati' and non-'Basmati' varieties, upon subjecting to curing treatments, showed significant increase (p<0.05) in length and L/B ratio, bulk density and true density and a significant decrease (p<0.05) in their breadth and thickness and porosity. Thousand kernel weight and moisture content increased with (ii) and (iii) and decreased with (i). Significant decrease (p<0.05) in amylose content, hot water soluble amylose content, starch iodine blue value, gel consistency and non reducing sugar content and increase in reducing sugars of both control and experimental samples of 'Basmati' and non-'Basmati' rice were noted upon curing.
