摘要 : The phenolic composition of different Croatian white wines (Rhine Riesling, Sauvignon, Chardonnay, Riesling, Traminer, Sylvaner and Malvasia istriana) including hydroxybenzoic and hydroxycinnamic acids as well as flavan-3-ols was ... 展开 The phenolic composition of different Croatian white wines (Rhine Riesling, Sauvignon, Chardonnay, Riesling, Traminer, Sylvaner and Malvasia istriana) including hydroxybenzoic and hydroxycinnamic acids as well as flavan-3-ols was identified and quantified by using a high-performance liquid chromatography system coupled with photodiode array detection (HPLC-PDA). In all samples were determined total phenol and total flavonoid content as well as antioxidant activity. Caffeic acid was the dominant phenolic acid in all studied wines, (-)-epicatechin was the most abundant flavan-3-ol in all wines, except Riesling and Malvasia istriana, where was detected the highest content of (-)-ECG and (+)-catechin, respectively. Antioxidant activity of wines was determined with three different methods: β-carotene bleaching (BCB), 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulfonic acid (ABTS) radical scavenging methods. The significant linear correlation was confirmed between the total phenol content as well as total flavonoid content and antioxidant activities of wines obtained by BCB, DPPH and ABTS assays. 收起
