The following results were obtained fo... 展开 Buffalo milk (845 samples) from the newly created Bulgarian Murrah breed was analysed. Fat, total protein, lactose, solids not fat and total solids contents were determined through Milkoskan. The following results were obtained for these parameters,respectively: 7.36, 4.19, 5.08, 10.10 and 17.47. The genotypic correlations between the fat and total protein (rg=0.885) and between fat and lactose contents (rg=0.655) had very high values. The genotypic correlation regarding lactose and total proteincontents in the milk was average (rg=0.555). Simultaneously, milk properties such as thickness, acidity, ability of forming milk curdles, number of microorganisms, coagulation time and coagulation acidity were also analysed. It was established that the factor number of lactation in buffalo cows significantly influences the content of milk but the lineage of the buffaloes influenced lactose content only (P < 0.01). 收起
