摘要 : The effect of the somatic cell count (SCC) on milk composition from individual udder quarters of dairy cattle was investigated. 151 milk samples from individual udder quarters were collected and analysed for composition (fat, prot... 展开 The effect of the somatic cell count (SCC) on milk composition from individual udder quarters of dairy cattle was investigated. 151 milk samples from individual udder quarters were collected and analysed for composition (fat, protein, casein, lactose, TS, SNF), microbiological quality, f.p., pH and titratable acidity. The samples were categorized as low-, medium- or high-SCC milk containing <=10⁵, between 10⁵ and 10⁶, and >10⁶ cells/ml, respectively. The results show that 35.10, 39.07 and 25.83% of samples were categorized as low-, medium- and high-SCC milk, respectively. Furthemore, the protein content of each individual milk sample increased significantly (<i>P</i> < 0.05) with increasing SCC - 3.39% protein in low-SCC milk to 3.60% in the high-SCC milk samples. The milk casein content also increased with increasing SCC up to 10⁶ cells/ml (2.60 and 2.65% in low- and medium-SCC milk, respectively) after which it decreased to 2.35% in high-SCC milk (<i>P</i> < 0.05). The lactose content of high-SCC milk was significantly lower (<i>P</i> < 0.001) than that of low-SCC milk (4.16 vs. 4.73%). The SNF content of the high-SCC milk was significantly lower than that of the low- or medium-SCC milk samples (<i>P</i> < 0.05). The pH values were 6.72 +or- 0.07, 6.65 +or- 0.44 and 6.83 +or- 0.16 for the low-, medium- and high-SCC milk, respectively; significantly higher in the high-SCC milk (<i>P</i> < 0.05). Titratable acidity was significantly (<i>P</i> < 0.05) lower in the high-SCC individual milk samples (6.90, 6.76 and 6.03% for low-, medium- and high-SCC milk, respectively). 收起
